Patrick Gauthier’s restaurant overlooks the River Yonne at the tip of an island shaped like the bow of a ship. In a setting where you’d be forgiven for thinking that you weren’t in the centre of a town, the interior design is inspired by his many trips to Scandinavia and Asia. Defining himself as a “cook first and foremost”, this chef, who is highly passionate about his work, continues to personally present guests with his everyday specials based on daily availability and deliveries. A great fan of markets and fish and seafood, he creates authentic, spirited cuisine full of flavour such as carpaccio of amberjack with seasonal vegetables; delicately cooked John Dory with a citrus beurre blanc; and black Bigorre pork with a full-flavoured jus and garlic confit. Plus, not just one but four cheese trolleys and an excellent wine list!
