Here, chef Philippe Augé creates carefully prepared, seasonal cuisine based on classic principles, resulting in dishes such as green Acquerello risotto with frogs’ legs and Burgundy snails, and blue lobster with aubergine moussaka and a coriander and lemongrass shellfish jus.
