Located in the upper part of the city, Saó boasts an evocative name (which translates as “ripeness” in English) that describes the “perfect maturity” of ingredients used here. Valencia-born chef Juanen Benavent develops his menus based on locally sourced seasonal produce, creating traditional dishes with a strong French influence, which comes from four years working at the Goust restaurant in Paris.
