The low-key, stylish Saint Martin Hotel, whose guestrooms command sweeping views over the hillsides of Vence and the Mediterranean, is most definitely a treat for the eye. The plush dining room decked in terracotta tiles and wrought-iron furniture with tasteful cream-coloured cushions leads out onto a breathtaking terrace overlooking the sea. The contemporary, polished repertory stars a rollcall of premium Mediterranean produce: red mullet, dentex, baby artichokes and tomatoes of all shapes and sizes. Every detail has been endlessly puzzled and pondered over from the main ingredient to the side dishes, illustrated by deboned red mullet served butterfly style with the tail, with big-boned emulsions and jus that will knock your socks off. The exquisite plating is meticulous, razor-sharp and rich in colours, as are the desserts which are equally inspired.
