In the heart of Trieste’s historic centre, the grand halls of the former Palazzo della Borsa now house the sophisticated dining concept created by Matteo Metullio and Davide De Pra. The elegant, contemporary setting retains a precious link to the past in the original motifs decorating the window panes – the one historical feature that has been carefully restored. One of the standout items on the menu is the selection dedicated to the sea and the spirit of Trieste, featuring dishes such as cold spaghettino with beetroot, lemon ponzu, yuzu mayonnaise and tuna tartare with chives. Alongside this, there are menus that explore the combination of meat and fish, as well as a selection of the restaurant’s great classics, including the iconic Harrysotto.
