The ingredients are chosen with the same superlative care as at La Vague d'Or, and crafted into globetrotting, Mediterranean dishes, flanked by gutsy sauces and jus: a velvety emulsion of coconut, lemongrass and kumquat enhances John Dory roasted in seaweed or coconut- and sweet pepper-laced leche de tigre on raw greater amberjack.
