Quanzhou has been home to the Chinese diaspora in Southeast Asia for centuries, hence the menu combining Minnan and Southeast Asian cuisines. The mildly spicy Quanzhou curry crab (without coconut milk) is infused with flavour by dried seafood. Their ginger braised squab leg is a variation on the classic ginger duck stew.
