Just a stone’s throw from the statue of Domenico Modugno and one of Polignano a Mare’s most iconic viewpoints, Meraviglioso boasts a location that alone makes it well worth a visit, with spectacular views of the Adriatic Sea and the characteristic houses perched on the cliffs. But it is at the table that the restaurant truly reveals its identity. Here, chef Andrea Vicario – originally from Lucera and with a wealth of experience gained in Italy and abroad – presents a cuisine that celebrates the Apulian region through a contemporary sensitivity and impeccable technique, with a focus on flavour. The sea takes centre stage in a refined yet understated menu, as demonstrated by the langoustine tartare served on a crispy pancotto patty with Swiss chard and finished with a delicate shellfish beurre blanc – a harmonious blend of coastal traditions and flavours from the hinterland. Among the main courses, the dishes cooked on the Josper charcoal grill stand out, as they showcase the quality of the ingredients. The meal concludes with a dessert that plays on citrus fruits and textures: creamy sorbet made from charcoal-grilled mandarins, coconut crumble, thin wafers filled with mandarin mousse, crema catalana made with local cheese, and a citrus sauce.
