Overlooking the Senate (upper house of the French parliament) and Luxembourg gardens, this friendly bistro in tune with its era sports an open kitchen and a small counter. ‘Ambos’ (‘both’ in Spanish) refers to Pierre Chomet and his Venezuelan wife, Cristina. Their culinary adventures have taken them from Bangkok to London and Paris, and a Top Chef TV season for Pierre. Together they lovingly concoct a light-hearted, personal and vibrant tapestry of flavours that draws on a wide variety of influences – European (monkfish from Le Guilvinec, butternut, tapioca and shellfish) and Thai (tom kha kai-style langoustine tartar,) as well as South American (Castilian beef, sweetcorn, cachapa and mole seasoning).
