Amid sinuous green valleys, within the luxurious Hotel Borgo La Chiaracia, in an elegant dining room or on the lovely outdoor terrace, the choice extends to three tasting menus, one of them entirely plant-based, though dishes may also be selected freely from either list. We were greatly impressed by the abilities of young chef Gabriel Collazzo: creativity combined with the local area, a chef of considerable talent!
